In the Kitchen – Summerlini Cocktail
You don’t need a special occasion to enjoy a nice summer cocktail, my excuse is generally visiting with friends and family or relaxing on a Saturday morning! With peaches being in season we can barley keep enough in our house because they are so good! We love the Bader Family Farm located in Campbell Missouri (their peaches are to die for!). My latest obsession combines a fresh fruit homemade popsicle and a spin on the classic belini!
Please Note: I use the 4 oz Zoku Round Pop Mold. They work great!
2 Fresh Peaches – Bader Family Farms
1 Cup of Organic Peach Nectar – Bionaturae
Peel skin off peaches and cut peach off core – Slice fruit into small cubes – Pour nectar and fruit into plastic container and place in freezer – Only keep peach mixture in freezer to allow for it to set up enough that your fruit won’t sink into the bottom of the popsicle mold – Once the mixture is set up pour into your pop molds and allow the popsicles to fully freeze through!
1 Bottle Pineo Grigio Bubbly – Barefoot Wines
Once Popsicles are ready to be enjoyed place them in your desired glass of choice and pour champagne in glass over popsicle until full!
